Hot pot etiquette question: am I doing this wrong?

Okay so I've been to hot pot three times now and I'm starting to think I'm violating some unwritten rules.

First — am I supposed to cook everything myself or does the staff help? Because sometimes someone comes over and drops stuff in for us, but mostly they just ignore us after bringing the raw ingredients.

Second — the dipping sauce bar. I just mix everything that looks good (sesame oil, garlic, cilantro, chili, oyster sauce). Is there a "correct" combo? Because my Chinese friend looked at my bowl like I committed a crime.

Third — ordering. We ordered way too much meat last time. Is there a per-person guideline? We were 4 people and got like 12 plates of sliced beef. Felt excessive.

Fourth — the broth splashes EVERYWHERE. Is there a technique to not get boiling oil on your arms? Or do you just accept it as part of the experience?

Fifth — is it rude to take photos? Because I took one of the "meat tower" (you know the thing where they hang meat on a wooden structure) and the waiter gave me a weird look.

Help a hot pot newbie out. What are the actual rules?
