The one dish I crave every time I leave China

I've traveled a lot. Eaten food everywhere. But there's one thing that no other country does even close to right.

La mian.

Not just "noodles." Specifically hand-pulled Lanzhou beef noodles. The kind where the guy stretches the dough, folds it, stretches it again, until it's impossibly thin. Drops it into boiling broth for exactly 30 seconds. Tops it with paper-thin beef slices, cilantro, green onion, and chili oil.

I can get "Chinese noodles" in London, New York, Sydney. They're fine. They're noodles in broth.

But the texture is wrong. The broth is wrong. The chili oil is wrong. The guy pulling the noodles isn't there.

There's something about watching your food being made by hand, 2 feet in front of you, in a shop that hasn't changed in 20 years. The owner knows your order. The regulars are arguing about soccer. The steam fogs up the window.

That's not just food. That's a whole thing. And you can't export it.

I get back to China, drop my bags, and go straight to the nearest la mian shop. Every single time.

What's the ONE China food you can't find anywhere else?
