Stay2CN Guide | Culture & Lifestyle — Food & Dining | Updated May 2026
Chinese cuisine is one of the world's greatest — but navigating it as a foreigner can be intimidating. Here's how to eat smart.
Major Regional Cuisines
Sichuan: Numbing-spicy (málà), hot pot, mapo tofu, kung pao chicken
Cantonese: Dim sum, roast duck, mild flavors, seafood
Shanghainese: Sweet & savory, braised pork, soup dumplings (xiao long bao)
Northern: Wheat-based, hand-pulled noodles, dumplings, Beijing duck
Hunan: Straight-up spicy, smoked meats, Chairman Mao's hometown
How to Order Without Chinese
• Point at photos on the menu
• Use Google Translate camera on Chinese menus
• Learn: "Zhe ge" (this one), "Bu la" (not spicy), "Lai yi fen" (one portion)
• Many restaurants now have QR-code ordering with pictures
Street Food Safety
✅ Eat at busy stalls with high turnover
✅ Look for fresh ingredients being prepared in front of you
✅ Stick to cooked food (avoid raw vegetables at street stalls)
✅ Night markets in major cities are generally safe
Dietary Restrictions
• Vegetarian: Say "Wo chi su" (I eat vegetarian). Buddhist temples have excellent veggie restaurants.
• Allergies: Write down in Chinese. Many restaurants are accommodating.
• Halal: Look for "清真" (Qingzhen) signs — Muslim Quarter in Xi'an is famous.
• Gluten-free: Challenging — soy sauce contains wheat. Ask for clear sauces.
Dining Etiquette
• Tipping is NOT customary
• Don't stick chopsticks upright in rice (funeral symbolism)
• The host usually pays — don't fight too hard to split the bill
• Toasting with baijiu is common in business settings
• Burping is acceptable (sign of satisfaction)
Food Delivery
• Meituan & Ele.me: Dominant apps. Chinese interface but photos help.
• Most deliveries arrive in 30–45 minutes
• Leave delivery instructions in Chinese or use hotel address
Must-Try Experiences
• Hot pot (火锅) — interactive dining, cook your own ingredients
• Dim sum (点心) — Cantonese brunch tradition
• Beijing Duck (北京烤鸭) — crispy skin, pancakes, hoisin sauce
• Hot & dry noodles (热干面) — Wuhan breakfast staple
• Lanzhou beef noodles (兰州拉面) — hand-pulled perfection
